There´s a Mexican in basically every European city, right? So why pressure yourself to try every dish in Mexico, when you can as well easily have it back home? For two reasons: Either it just tastes completely different there or you simply don´t get it outside Mexico. Here´s an introduction to the dishes I think you really shouldn´t miss when in Mexico!
Mexican street food is one of those things I started missing the moment I wasn´t in Mexico anymore. There´s a food stand at basically EVERY corner and the selection of both sweet and salty snacks seems to be never ending. If you are into food, I think you will like Guadalajara. As a big city it offers a huge variety, from best Mexican cuisine to all kinds of international dishes! And no matter if it´s a simple taco stand or an upper-class restaurant, in Guadalajara you´ll get an unbeaten value for money. I would even say the city would be worth a visit JUST for the food! During my time there I aimed to try every recommendation I got and, as an outcome, here are - only and exclusively - my absolute favorites.

The city of Guadalajara has its own unique charm and loads of places to discover while tourism is pretty low. Because it´s one of the destinations not everyone visits, you won´t have a hard time avoiding the masses to discover a very authentic modern Mexico.
Chiapas is one of the greenest areas in Mexico. It comes with amazing turquoise waterfalls, pre-hispanic ruins and the very authentic city of San Cristobal. In my opinion it's one of the completely underestimated locations in Mexico, already a famous travel destination among mexicans but still not really discovered by international tourists. Therefore it's probably one of the cheapest places you'll visit in Mexico and I think as well one of the most beautiful.
Meanwhile known all over the world, the mexican "day of the dead" is actually not a day but rather a week of celebration. In Mexico it's the most important festivity of the year and while the tradition comes from the indigineous, the day was set by the Spaniards equal to the catholic "All Saints' Day". Being in Mexico for this day was one of the most touching experiences I had during my stay and so different from what I expexted!
It´s the perfect TRAVEL location! Mexico is huge, it unites several different climates and its mix of cultures is ineffable.
